The Sfax governorate is home to the world's greatest concentration of olive cultivation. Its limestone-rich soil, dry Mediterranean heat, and ancient Chemlali variety combine to produce an oil unlike anything else on earth.
Sfax — Tunisia's second city and greatest agricultural force — is home to over 30 million olive trees across 415,000 hectares. For centuries it has been the world's single greatest concentration of olive cultivation.
The neighbourhood of Sakiet Ezzit — where our groves grow — is at the very heart of this ancient olive belt. The Chemlali olive, indigenous to Sfax, has grown here unchanged since Punic times.
Cartha Oliva is named for Qart-ḥadašt — Carthage, the great Phoenician city — honouring the civilization that made Tunisia the olive heartland of the ancient world.

Cartha Oliva was born from a conviction: that the world's finest olive oil was already growing in Sakiet Ezzit — and that the world deserved to know it.
Our founders — a Sfax family with three generations of Chemlali cultivation — decided in 2018 to stop selling their harvest in bulk and instead bottle it themselves. To give it a name, a story, and an uncompromising standard.
The name Cartha Oliva — from Qart-ḥadašt (Carthage, "the New City") and Oliva (Latin for olive) — is a bridge between our Punic roots and the world we wish to reach.
