The Olive
Capital of the World

Sfax — Tunisia's second city and greatest agricultural force — is home to over 30 million olive trees across 415,000 hectares. For centuries it has been the world's single greatest concentration of olive cultivation.

The neighbourhood of Sakiet Ezzit — where our groves grow — is at the very heart of this ancient olive belt. The Chemlali olive, indigenous to Sfax, has grown here unchanged since Punic times.

Cartha Oliva is named for Qart-ḥadašt — Carthage, the great Phoenician city — honouring the civilization that made Tunisia the olive heartland of the ancient world.

Questions

Frequently asked

What makes Cartha Oliva different from supermarket olive oil? +
Supermarket oils are industrial blends from multiple countries, processed for shelf stability over years. Cartha Oliva is single-estate, single-origin Chemlali from Sakiet Ezzit, Sfax — cold-pressed within 24 hours. No blending. No additives. No compromise.
What is the Chemlali variety and why is it special? +
Chemlali is an indigenous olive variety native to the Sfax region of Tunisia. It is small, dense, and extraordinarily rich in polyphenols — the natural antioxidants responsible for olive oil's health benefits and characteristic peppery bite. It is the DNA of Cartha Oliva.
Do you ship to Europe and worldwide? +
Yes. We ship across the European Union, UK, North America, the Gulf states, and 40+ countries worldwide. Our packaging is engineered for transport. Wholesale, distributor, and restaurant inquiries are warmly welcomed.
Is Cartha Oliva certified organic? +
Yes. Our estate has been certified organic since 2018 by both Tunisian ONAGRI and EU BIO standards. No synthetic herbicides, pesticides, or fertilizers. Ever. The soil of Sakiet Ezzit has been farmed without chemicals since our family began cultivating it.
What is the shelf life and how should I store it? +
Best consumed within 18 months of harvest. Store in a cool, dark place away from heat and light — never in the refrigerator. Every bottle carries the harvest date so you always know its exact age and provenance.
Do you offer gift sets or corporate orders? +
Yes. We offer premium gift sets, custom labelling for corporate clients, and large-volume orders for restaurants, luxury hotels, and specialty retailers worldwide. Contact us using the order form or by email for a tailored proposal.
Can I visit the estate in Sfax? +
We welcome guests to our Sakiet Ezzit estate during harvest season in November. Visits include a grove tour, cold-press demonstration, and formal tasting. Contact us to arrange your experience — we treat every guest as a member of our family.

Our Story

From Sfax to the
world's finest tables

Cartha Oliva was born from a conviction: that the world's finest olive oil was already growing in Sakiet Ezzit — and that the world deserved to know it.

Our founders — a Sfax family with three generations of Chemlali cultivation — decided in 2018 to stop selling their harvest in bulk and instead bottle it themselves. To give it a name, a story, and an uncompromising standard.

The name Cartha Oliva — from Qart-ḥadašt (Carthage, "the New City") and Oliva (Latin for olive) — is a bridge between our Punic roots and the world we wish to reach.

Our Mission

"To bring the ancient wisdom of Tunisian olive cultivation to the world — uncompromised, unblended, and told with pride from Sfax."

  • Single-estate Chemlali from Sakiet Ezzit, Sfax. One terroir. One story.
  • Harvest to bottle in under 24 hours. Never compromised.
  • EU Organic certified. Soil, trees, and process, all certified.
  • Proudly Tunisian. Proudly from Sfax. Proudly Chemlali.
Our Pillars

What we
stand for

🌿
Authenticity

No blending. No shortcuts. Every bottle is traceable to one grove, one harvest, one pressing. If we cannot guarantee its origin, it does not leave Sfax.

🏛️
Heritage

We are custodians of a 3,000-year agricultural tradition. From Carthage to Sfax to the world — we protect this legacy and transmit it with pride.

Excellence

We produce less so we can produce better. Limited yields, rigorous selection, and obsessive quality control. Every bottle is an ambassador for Sfax.
